- 4 boneless, skinless chicken breasts
- 2 cups cherry tomatoes, halved
- 8 ounces fresh mozzarella, sliced
- 1/4 cup fresh basil leaves
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 tablespoon balsamic glaze (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a sheet pan with parchment paper.
- Place chicken breasts on the pan. Drizzle with olive oil and season with salt, pepper, oregano, and garlic powder.
- Arrange halved cherry tomatoes around the chicken.
- Bake for 20-25 minutes or until chicken reaches 165°F (74°C).
- Remove from oven, top each chicken breast with mozzarella slices, and return to the oven for 3-5 minutes to melt the cheese.
- Garnish with fresh basil and drizzle with balsamic glaze before serving.
Notes
- Use fresh mozzarella for best results.
- Adjust seasoning to taste.
