Ingredients

- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 pound baby potatoes, halved
- 1 bunch asparagus, trimmed
- 1 red bell pepper, sliced
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix olive oil, garlic, lemon juice, zest, salt, pepper, and oregano.
- Toss chicken in half the mixture and place on a sheet pan.
- Add potatoes, asparagus, and bell pepper to the remaining mixture and spread around the chicken.
- Bake for 25-30 minutes or until chicken reaches 165°F (74°C).
- Serve immediately.
