Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 pound baby potatoes, halved
  • 1 bunch asparagus, trimmed
  • 1 red bell pepper, sliced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic, lemon juice, zest, salt, pepper, and oregano.
  3. Toss chicken in half the mixture and place on a sheet pan.
  4. Add potatoes, asparagus, and bell pepper to the remaining mixture and spread around the chicken.

  6. Serve immediately.
