Description
A simple and delicious sheet pan meal featuring maple-glazed salmon with roasted vegetables.
Ingredients

- 4 salmon fillets (6 oz each)
- 1/4 cup maple syrup
- 2 tbsp soy sauce
- 1 tbsp Dijon mustard
- 1 clove garlic, minced
- 1 lb baby potatoes, halved
- 1 bunch asparagus, trimmed
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper.
- In a small bowl, whisk together maple syrup, soy sauce, Dijon mustard, and minced garlic.
- Toss potatoes with olive oil, salt, and pepper. Spread on half of the sheet pan.
- Roast potatoes for 15 minutes.
- Place salmon fillets on the other half of the sheet pan. Brush with maple glaze.
- Add asparagus to the pan with potatoes.
- Return to oven and bake for 12-15 minutes, until salmon is cooked through.
- Brush salmon with remaining glaze before serving.
Notes
- Use fresh salmon for best results.
- Adjust roasting time if using thicker salmon fillets.
- Substitute green beans for asparagus if preferred.
