Description

Make a flavorful turkey stock with simple ingredients. Use it as a base for soups, gravies, and sauces.


Ingredients

Scale
  • 1 turkey carcass (leftover bones)
  • 8 cups water
  • 1 onion, quartered
  • 2 carrots, roughly chopped
  • 2 celery stalks, roughly chopped
  • 2 garlic cloves, smashed
  • 1 bay leaf
  • 1 tsp black peppercorns
  • 1 tsp salt (adjust to taste)

Instructions

  1. Place the turkey carcass in a large pot.
  2. Add water, onion, carrots, celery, garlic, bay leaf, peppercorns, and salt.
  3. Bring to a boil, then reduce heat to a simmer.
  4. Simmer uncovered for 3 hours, skimming foam occasionally.
  5. Strain the stock through a fine-mesh sieve.
  6. Discard solids and let the stock cool before storing.

Notes

  • Store in the fridge for up to 4 days or freeze for longer use.
  • Skim excess fat after cooling for a clearer stock.
  • Adjust seasoning as needed for your recipe.
