- 1 turkey carcass (leftover bones)
- 8 cups water
- 1 onion, quartered
- 2 carrots, roughly chopped
- 2 celery stalks, roughly chopped
- 2 garlic cloves, smashed
- 1 bay leaf
- 1 tsp black peppercorns
- 1 tsp salt (adjust to taste)
Instructions
- Place the turkey carcass in a large pot.
- Add water, onion, carrots, celery, garlic, bay leaf, peppercorns, and salt.
- Bring to a boil, then reduce heat to a simmer.
- Simmer uncovered for 3 hours, skimming foam occasionally.
- Strain the stock through a fine-mesh sieve.
- Discard solids and let the stock cool before storing.
Notes
- Store in the fridge for up to 4 days or freeze for longer use.
- Skim excess fat after cooling for a clearer stock.
- Adjust seasoning as needed for your recipe.
