- 4 ears of corn, husked and cleaned
- 2 tablespoons butter
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1 lime, juiced
- 2 tablespoons chopped cilantro
- Salt to taste
Instructions
- Heat a skillet over medium heat and melt the butter.
- Add the corn and cook for 8-10 minutes, stirring occasionally, until lightly charred.
- In a bowl, mix mayonnaise, sour cream, lime juice, chili powder, and smoked paprika.
- Spread the mixture over the cooked corn in the skillet.
- Sprinkle cotija cheese and cilantro on top.
- Serve immediately.
Notes
- For extra flavor, add a pinch of cayenne pepper.
- Replace cotija cheese with feta if unavailable.
- Grill the corn instead of skillet-cooking for a smokier taste.
