- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) diced tomatoes
- 1 cup corn kernels
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded cheddar cheese
- 1 cup crushed tortilla chips
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add onion, bell pepper, and garlic. Cook until softened.
- Transfer the beef mixture to the slow cooker.
- Add kidney beans, black beans, diced tomatoes, corn, chili powder, cumin, paprika, salt, and pepper. Stir well.
- Cover and cook on low for 6 hours or high for 3 hours.
- Top with shredded cheese and crushed tortilla chips. Cover for 5 minutes to melt cheese.
- Serve hot.
Notes
- For extra heat, add jalapeños or hot sauce.
- Substitute ground turkey for a leaner option.
- Freeze leftovers in airtight containers for up to 3 months.
