Description

A hearty and flavorful dish made with ground beef, beans, and cheese, slow-cooked to perfection. Ideal for busy weeknights or casual gatherings.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) diced tomatoes
  • 1 cup corn kernels
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup crushed tortilla chips

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  2. Add onion, bell pepper, and garlic. Cook until softened.
  3. Transfer the beef mixture to the slow cooker.
  4. Add kidney beans, black beans, diced tomatoes, corn, chili powder, cumin, paprika, salt, and pepper. Stir well.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Top with shredded cheese and crushed tortilla chips. Cover for 5 minutes to melt cheese.
  7. Serve hot.

  • For extra heat, add jalapeños or hot sauce.
  • Substitute ground turkey for a leaner option.
