Southwest Ranch Pinwheels are a quick and easy appetizer with creamy ranch, spicy flavors, and fresh veggies wrapped in tortillas.

- 2 large flour tortillas
- 4 oz cream cheese, softened
- 2 tbsp ranch dressing
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced red bell pepper
- 1/4 cup black beans, rinsed and drained
- 1/4 cup corn kernels
- 2 tbsp diced green onions
- 1/2 tsp chili powder
- 1/4 tsp cumin
Instructions
- Mix cream cheese and ranch dressing in a bowl until smooth.
- Stir in shredded cheddar, red bell pepper, black beans, corn, green onions, chili powder, and cumin.
- Spread the mixture evenly over the tortillas.
- Roll the tortillas tightly into logs.
- Wrap in plastic wrap and refrigerate for 30 minutes.
- Slice into 1-inch pieces before serving.

- Use room temperature cream cheese for easier mixing.
- Add diced jalapeños for extra heat.
- Serve with salsa or sour cream for dipping.
