Ingredients

- 8 oz rotini pasta
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 avocado, diced
- 1/2 cup cheddar cheese, shredded
- 1/3 cup ranch dressing
- 2 tbsp lime juice
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine pasta, black beans, corn, red bell pepper, red onion, cilantro, and avocado.
- In a small bowl, whisk ranch dressing, lime juice, chili powder, cumin, salt, and pepper.
- Pour dressing over pasta mixture and toss to coat.
- Sprinkle shredded cheddar cheese on top.
- Chill for at least 30 minutes before serving.
Notes
- For a spicier kick, add diced jalapeños.
- Substitute Greek yogurt for ranch dressing for a lighter option.
- Best served the same day to keep avocado fresh.
