Ingredients

- 400g spaghetti
- 6 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil
- 1 tsp red chili flakes
- 1/2 cup fresh parsley, chopped
- Salt, to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Bring a large pot of salted water to a boil and cook the spaghetti until al dente.
- While the pasta cooks, heat olive oil in a large pan over medium-low heat.
- Add the sliced garlic and chili flakes, sauté until garlic is golden but not burned.
- Drain the pasta, reserving 1/2 cup of pasta water.
- Toss the cooked pasta in the pan with the garlic oil mixture.
- Add the reserved pasta water gradually to loosen the sauce if needed.
- Stir in chopped parsley and season with salt to taste.
- Serve hot, optionally topped with grated Parmesan.
Notes
- Use high-quality olive oil for best flavor.
- Do not let the garlic burn—it turns bitter.
- Add pasta water as needed to create a silky sauce.
- For extra texture, toast breadcrumbs in a pan and sprinkle on top.
