- 1 whole turkey (12–14 lbs)
- 1 cup unsalted butter, softened
- 6 cloves garlic, minced
- 2 tbsp fresh thyme, chopped
- 1 tbsp salt
- 1 tsp black pepper
- 1 lemon, sliced
Instructions
- Preheat oven to 425°F.
- Spatchcock the turkey by removing the backbone and flattening it.
- Mix butter, garlic, thyme, salt, and pepper.
- Rub garlic butter under and over the turkey skin.
- Place lemon slices on top.
- Roast for 1.5-2 hours until internal temperature reaches 165°F.
- Rest for 15 minutes before carving.
