Description

A warm and comforting soup combining pumpkin and apple, spiced for extra flavor.


Ingredients

Scale
  • 2 cups pumpkin puree
  • 1 large apple, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • Salt to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add diced apple, pumpkin puree, and spices. Stir well.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Blend until smooth using an immersion blender.
  7. Season with salt to taste.
  8. Serve warm.
