- 1/4 tsp ground cinnamon
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and minced garlic. Sauté until softened.
- Stir in the spices and cook for 1 minute.
- Add lentils and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Stir in pumpkin puree and cook for another 10 minutes.
- Season with salt and pepper to taste.
- Serve hot.
