Description

Grilled shrimp skewers with a sweet and spicy mango glaze.


Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 1 ripe mango, peeled and diced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp honey
  • 1 tsp red pepper flakes
  • 1 lime, juiced
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions

  1. Preheat grill to medium-high heat.
  2. In a blender, combine mango, olive oil, garlic, honey, red pepper flakes, and lime juice. Blend until smooth.
  3. Thread shrimp onto skewers and brush with half of the mango glaze.
  4. Grill skewers for 2-3 minutes per side, basting with remaining glaze.
  5. Serve immediately.
