Instructions
- Heat oil in a large skillet over medium heat.
- Add diced potatoes and cook for 15 minutes, stirring occasionally, until golden and crispy.
- In a small bowl, mix salt, smoked paprika, chili powder, cumin, and cayenne pepper.
- Sprinkle the spice mix over the potatoes and stir to coat evenly.
- Add minced garlic and cook for 1-2 minutes until fragrant.
- Remove from heat and drizzle with lime juice.
- Garnish with fresh cilantro before serving.
Notes
- For extra heat, add more cayenne pepper.
- Use russet or Yukon Gold potatoes for best texture.
- Serve with lime wedges and sour cream if desired.
