- 8 oz macaroni
- 2 cups fresh spinach, chopped
- 1 cup artichoke hearts, chopped
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups milk
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Cook macaroni according to package instructions. Drain and set aside.
- In a large saucepan, melt butter over medium heat. Stir in flour to form a roux.
- Gradually whisk in milk until smooth. Cook until thickened, about 3-4 minutes.
- Add cheddar, mozzarella, and Parmesan cheeses, stirring until melted.
- Mix in garlic powder, salt, and black pepper.
- Fold in cooked macaroni, spinach, and artichoke hearts until well combined.
- Serve hot.

- Use fresh spinach for best results.
- Adjust cheese quantities to your preference.
- Add a pinch of red pepper flakes for a spicy kick.
