Description

A creamy and cheesy macaroni dish with the added flavors of spinach and artichoke.


Ingredients

  • 8 oz macaroni
  • 2 cups fresh spinach, chopped
  • 1 cup artichoke hearts, chopped
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups milk
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cook macaroni according to package instructions. Drain and set aside.
  2. In a large saucepan, melt butter over medium heat. Stir in flour to form a roux.
  3. Gradually whisk in milk until smooth. Cook until thickened, about 3-4 minutes.
  4. Add cheddar, mozzarella, and Parmesan cheeses, stirring until melted.
  5. Mix in garlic powder, salt, and black pepper.
  6. Fold in cooked macaroni, spinach, and artichoke hearts until well combined.
  7. Serve hot.
