- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 eggs
- 1 cup granulated sugar
- 2 tbsp lemon zest
- 1/4 cup lemon juice
- 1/4 cup all-purpose flour
- 1/2 tsp baking powder
- 1 cup fresh strawberries, diced
- Powdered sugar for dusting
Instructions
- Preheat oven to 350°F.
- Mix 1 cup flour, powdered sugar, and butter to form crust.
- Press crust into an 8×8 pan and bake for 15 minutes.
- Whisk eggs, granulated sugar, lemon zest, and lemon juice.
- Stir in remaining flour and baking powder.
- Fold in diced strawberries.
- Pour filling over baked crust.
- Bake for 25 minutes.
- Cool completely before dusting with powdered sugar.
