A refreshing pasta salad with strawberries and spinach, perfect for summer meals.
Ingredients

- 8 oz pasta (penne or fusilli)
- 2 cups fresh spinach, chopped
- 1 cup strawberries, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup walnuts, chopped
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, combine spinach, strawberries, red onion, feta cheese, and walnuts.
- Add cooled pasta to the bowl.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
- Pour dressing over the salad and toss gently to combine.
- Serve chilled or at room temperature.

- Use fresh strawberries for the best flavor.
- Substitute walnuts with almonds or pecans if preferred.
