A delicious and easy-to-make casserole combining the flavors of Mexican street corn with tender chicken.

- 2 cups cooked chicken, shredded
- 1 can (15 oz) corn, drained
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- 1/4 cup cotija cheese, crumbled
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix chicken, corn, mayonnaise, sour cream, chili powder, garlic powder, cumin, lime juice, salt, and pepper.
- Transfer the mixture to a baking dish and top with shredded cheese.
- Bake for 20-25 minutes until bubbly and cheese is melted.
- Garnish with cotija cheese and cilantro before serving.
Notes
- For extra flavor, char the corn in a pan before adding.
- Substitute cotija cheese with feta if unavailable.
- Serve with lime wedges on the side.
