A refreshing and colorful dessert perfect for summer. Layers of berry-flavored jello, creamy filling, and fresh berries create a light and tasty treat.

- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
- 3 boxes (3 oz each) berry-flavored jello
- 1 cup boiling water
- 1 cup cold water
- 1 package (8 oz) cream cheese, softened
- 1/2 cup powdered sugar
- 1 cup heavy whipping cream
- 1 tsp vanilla extract
Instructions
- Dissolve one box of jello in 1 cup boiling water. Stir until fully dissolved.
- Add 1 cup cold water and mix well. Pour into a 9×13 dish and refrigerate until set, about 1 hour.
- Beat cream cheese and powdered sugar until smooth. Add heavy cream and vanilla, then whip until stiff peaks form.
- Spread half the cream mixture over the set jello layer. Arrange half the berries on top.
- Repeat steps 1-2 with the second jello box and layer over the berries. Refrigerate until set.
- Spread remaining cream mixture and top with remaining berries. Chill for at least 4 hours before serving.
Notes
- Use different jello flavors for varied colors and tastes.
- For a firmer texture, use less water in the jello mix.
- Substitute yogurt for a lighter cream layer.
