Ingredients
Scale
- 2 medium sweet potatoes, peeled and diced
- 4 cups kale, chopped
- 2 tbsp olive oil
- 1 tbsp maple syrup
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup dried cranberries
- 1/4 cup chopped walnuts
- 1 tbsp balsamic vinegar
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with 1 tbsp olive oil, maple syrup, salt, and pepper.
- Roast sweet potatoes for 25 minutes until tender.
- Massage kale with remaining olive oil to soften leaves.
- Combine roasted sweet potatoes, kale, cranberries, and walnuts.
- Drizzle with balsamic vinegar before serving.
