Description
A delicious vegetarian burger made with sweet potatoes and black beans. Perfect for a healthy meal.
Ingredients

- 1 large sweet potato, cooked and mashed
- 1 can black beans, rinsed and drained
- 1/2 cup breadcrumbs
- 1 egg, beaten
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Mix mashed sweet potato, black beans, breadcrumbs, egg, cumin, paprika, salt, and pepper in a bowl.
- Form the mixture into 4 patties.
- Heat olive oil in a pan over medium heat.
- Cook each patty for 3-4 minutes per side until golden brown.
- Transfer to a baking sheet and bake for 10 minutes.
- Serve on buns with your favorite toppings.
Notes
- For a vegan version, replace the egg with a flax egg.
- These burgers can be frozen before baking.
