Description

A delicious vegetarian burger made with sweet potatoes and black beans. Perfect for a healthy meal.


Ingredients

Scale
  • 1 large sweet potato, cooked and mashed
  • 1 can black beans, rinsed and drained
  • 1/2 cup breadcrumbs
  • 1 egg, beaten
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix mashed sweet potato, black beans, breadcrumbs, egg, cumin, paprika, salt, and pepper in a bowl.
  3. Form the mixture into 4 patties.
  4. Heat olive oil in a pan over medium heat.
  5. Cook each patty for 3-4 minutes per side until golden brown.
  6. Transfer to a baking sheet and bake for 10 minutes.
  7. Serve on buns with your favorite toppings.

Notes

  • For a vegan version, replace the egg with a flax egg.
  • These burgers can be frozen before baking.
