Ingredients

- 1 cup mashed sweet potatoes
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger
- 1/4 cup water
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- Mix mashed sweet potatoes, oil, eggs, and water in a bowl.
- In another bowl, combine flour, sugars, baking soda, salt, and spices.
- Add dry ingredients to wet ingredients and mix until combined.
- Pour batter into the prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool before slicing.

- Store in an airtight container for up to 3 days.
- Freeze for longer storage.
