Ingredients

- 3 cups mashed sweet potatoes
- 1/2 cup granulated sugar
- 2 eggs, beaten
- 1/2 cup milk
- 1/4 cup butter, melted
- 1 tsp vanilla extract
- 1/2 tsp salt
- 2 cups mini marshmallows
Instructions
- Preheat oven to 350°F (175°C).
- Mix mashed sweet potatoes, sugar, eggs, milk, melted butter, vanilla, and salt in a bowl.
- Spread mixture into a greased baking dish.
- Bake for 25 minutes.
- Remove from oven and top with marshmallows.
- Return to oven and bake for 10 more minutes or until marshmallows are golden.
Notes
- Use fresh sweet potatoes for best flavor.
- Adjust sugar to taste.
- Let cool slightly before serving.
