Ingredients

- 1 cup mashed sweet potatoes
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a bowl, mix flour, sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk mashed sweet potatoes, oil, eggs, and vanilla.
- Combine wet and dry ingredients until just mixed.
- Fill cupcake liners 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool before frosting.
Notes
- Use freshly mashed sweet potatoes for best texture.
- Adjust sugar to taste if sweet potatoes are very sweet.
- Store in an airtight container for up to 3 days.
