Ingredients

  • 1 cup mashed sweet potatoes
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, mix flour, sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk mashed sweet potatoes, oil, eggs, and vanilla.
  4. Combine wet and dry ingredients until just mixed.
  5. Fill cupcake liners 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool before frosting.

Notes

  • Use freshly mashed sweet potatoes for best texture.
  • Adjust sugar to taste if sweet potatoes are very sweet.
