Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1 small onion, diced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in an oven-safe skillet over medium heat.
  3. Add diced sweet potatoes and onion, cook until softened (8-10 minutes).
  4. In a bowl, whisk eggs, milk, salt, pepper, and paprika.
  5. Pour egg mixture over sweet potatoes in the skillet.
  6. Sprinkle cheese evenly on top.
  7. Transfer skillet to the oven and bake for 15-18 minutes until eggs are set.
  8. Let cool for 5 minutes before slicing.
