- 2 medium sweet potatoes, peeled and diced
- 6 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheddar cheese
- 1 small onion, diced
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in an oven-safe skillet over medium heat.
- Add diced sweet potatoes and onion, cook until softened (8-10 minutes).
- In a bowl, whisk eggs, milk, salt, pepper, and paprika.
- Pour egg mixture over sweet potatoes in the skillet.
- Sprinkle cheese evenly on top.
- Transfer skillet to the oven and bake for 15-18 minutes until eggs are set.
- Let cool for 5 minutes before slicing.

- Add spinach or bell peppers for extra veggies.
