Description

A delicious and healthy twist on classic lasagna, made with layers of sweet potato slices instead of pasta.


Ingredients

Scale
  • 2 large sweet potatoes, thinly sliced
  • 1 lb ground turkey or beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown the ground meat in a skillet over medium heat. Add onion and garlic, cook until soft.
  3. Stir in tomato sauce, basil, oregano, salt, and pepper. Simmer for 5 minutes.
  4. In a bowl, mix ricotta, Parmesan, egg, salt, and pepper.
  5. Layer sweet potato slices in a baking dish. Spread half the meat sauce on top.
  6. Add another layer of sweet potatoes, then spread the ricotta mixture.
  7. Top with remaining meat sauce and mozzarella cheese.
  8. Cover with foil and bake for 45 minutes. Remove foil and bake 15 more minutes.

  • Slice sweet potatoes thinly for even cooking.
  • Substitute ricotta with cottage cheese for a lighter option.
  • Let lasagna rest for 10 minutes before serving.
