A delicious and healthy twist on classic lasagna, made with layers of sweet potato slices instead of pasta.
Ingredients

- 2 large sweet potatoes, thinly sliced
- 1 lb ground turkey or beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) tomato sauce
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 egg
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Brown the ground meat in a skillet over medium heat. Add onion and garlic, cook until soft.
- Stir in tomato sauce, basil, oregano, salt, and pepper. Simmer for 5 minutes.
- In a bowl, mix ricotta, Parmesan, egg, salt, and pepper.
- Layer sweet potato slices in a baking dish. Spread half the meat sauce on top.
- Add another layer of sweet potatoes, then spread the ricotta mixture.
- Top with remaining meat sauce and mozzarella cheese.
- Cover with foil and bake for 45 minutes. Remove foil and bake 15 more minutes.
Notes
- Slice sweet potatoes thinly for even cooking.
- Substitute ricotta with cottage cheese for a lighter option.
- Let lasagna rest for 10 minutes before serving.
