- 1 cup mashed sweet potatoes
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 1 egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
- In a bowl, mix mashed sweet potatoes, brown sugar, oil, egg, and vanilla.
- In another bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Combine wet and dry ingredients. Stir until just mixed.
- Fill muffin cups 2/3 full. Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
- Use freshly cooked or canned sweet potatoes.
- Store in an airtight container for up to 3 days.
- Freeze for longer storage.
