Description

Sweet potato nachos are a healthy and flavorful twist on the classic nachos. They are made with crispy baked sweet potato slices topped with cheese, beans, and fresh toppings.


Ingredients

  • 2 large sweet potatoes, thinly sliced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 cup shredded cheddar cheese
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream
  • 1/4 cup salsa

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato slices with olive oil, salt, pepper, and paprika.
  3. Arrange slices in a single layer on a baking sheet.
  4. Bake for 20 minutes, flipping halfway.
  5. Sprinkle cheese and beans over the sweet potatoes.
  6. Bake for 5 more minutes until cheese melts.
  7. Top with red onion, cilantro, sour cream, and salsa.
  8. Serve immediately.
