Instructions
- Preheat your oven to 350°F. Grease a 9×5-inch loaf pan.
- In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, cream butter and sugar until light and fluffy.
- Beat in eggs one at a time, then mix in vanilla and mashed sweet potatoes.
- Alternately add the dry ingredients and buttermilk to the wet mixture, mixing just until combined.
- Pour batter into the prepared pan and bake for 50-60 minutes, or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
