A quick and healthy meal featuring sweet potatoes and cheese in a crispy tortilla.
Ingredients

- 2 medium sweet potatoes (peeled and diced)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp cumin
- 1 tsp paprika
- 4 large flour tortillas
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup black beans (rinsed)
- 1/4 cup chopped cilantro
- 1/2 avocado (sliced)
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, salt, pepper, cumin, and paprika.
- Spread on a baking sheet and roast for 20 minutes.
- Heat a skillet over medium heat.
- Place a tortilla in the skillet.
- Sprinkle half with cheese, roasted sweet potatoes, black beans, and cilantro.
- Fold tortilla in half and cook until golden, about 2 minutes per side.
- Repeat with remaining tortillas.
- Slice and serve with avocado.
Notes
- Use gluten-free tortillas if needed.
- Add jalapeños for extra spice.
- Store leftovers in an airtight container.
