Ingredients

- 2 medium sweet potatoes, peeled and diced
- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp sesame oil
- 1/4 tsp red pepper flakes
- 2 green onions, sliced
- 1 tbsp sesame seeds
Instructions
- Heat olive oil in a large pan over medium heat.
- Add sweet potatoes and cook for 5 minutes, stirring occasionally.
- Add bell pepper and broccoli. Cook for another 5 minutes.
- Stir in garlic and ginger. Cook for 1 minute.
- Pour in soy sauce, honey, sesame oil, and red pepper flakes. Stir well.
- Cook for 2 more minutes until the sauce thickens slightly.
- Garnish with green onions and sesame seeds before serving.
Notes
- Cut sweet potatoes into even pieces for uniform cooking.
- Adjust red pepper flakes to your preferred spice level.
- Serve over rice or quinoa for a complete meal.
