Description

A quick and healthy sweet potato stir-fry packed with flavor and nutrients. Perfect for a weeknight dinner.


Ingredients

Scale
  • 2 medium sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1/4 tsp red pepper flakes
  • 2 green onions, sliced
  • 1 tbsp sesame seeds

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add sweet potatoes and cook for 5 minutes, stirring occasionally.
  3. Add bell pepper and broccoli. Cook for another 5 minutes.
  4. Stir in garlic and ginger. Cook for 1 minute.
  5. Pour in soy sauce, honey, sesame oil, and red pepper flakes. Stir well.
  6. Cook for 2 more minutes until the sauce thickens slightly.
  7. Garnish with green onions and sesame seeds before serving.

Notes

  • Cut sweet potatoes into even pieces for uniform cooking.
  • Adjust red pepper flakes to your preferred spice level.
  • Serve over rice or quinoa for a complete meal.
