Description

A delicious and healthy appetizer featuring roasted sweet potato stuffed into savory mushrooms.


Ingredients

Scale
  • 12 large mushrooms, stems removed
  • 1 medium sweet potato, peeled and diced
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp grated parmesan cheese (optional)
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Toss sweet potato cubes with olive oil, garlic powder, smoked paprika, salt, and pepper.
  3. Roast sweet potatoes for 20 minutes or until tender.
  4. While potatoes roast, prepare mushrooms by removing stems and brushing caps with olive oil.
  5. Mash roasted sweet potatoes and spoon mixture into mushroom caps.
  6. Sprinkle with parmesan cheese if using.
  7. Bake stuffed mushrooms for 15 minutes until golden.
  8. Garnish with fresh parsley before serving.

Notes

  • Choose mushrooms with deep caps for easier stuffing.
  • For vegan version, omit parmesan or use nutritional yeast.
  • Sweet potatoes can be roasted ahead of time.
