- 4 large bell peppers (any color)
- 2 medium sweet potatoes, peeled and diced
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 cup shredded cheese (optional)
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- Boil sweet potatoes until tender, about 10-12 minutes. Drain and mash.
- Mix mashed sweet potatoes with olive oil, salt, pepper, paprika, and garlic powder.
- Stuff the bell peppers with the sweet potato mixture.
- Bake for 20-25 minutes until peppers soften.
- Sprinkle cheese on top and bake for 5 more minutes if using.
- Garnish with parsley before serving.

- Use any color of bell peppers for variety.
- Add cooked quinoa or black beans for extra protein.
