Ingredients

- 2 medium sweet potatoes, peeled and diced
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 8 small corn tortillas
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 1/4 cup crumbled feta cheese
- 1 lime, cut into wedges
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, cumin, paprika, garlic powder, and salt.
- Spread on a baking sheet and roast for 25 minutes, flipping halfway.
- Warm tortillas in a dry skillet or oven.
- Fill tortillas with roasted sweet potatoes.
- Top with avocado, cilantro, and feta cheese.
- Serve with lime wedges.
Notes
- For extra flavor, add a pinch of chili powder.
- Use gluten-free tortillas if needed.
- Store leftovers in an airtight container for up to 3 days.
