Ingredients

- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 tbsp ground ginger
- 1 tbsp fresh grated ginger
- 2 tbsp crystallized ginger (chopped)
- 3/4 cup unsalted butter (softened)
- 1 cup brown sugar
- 1 egg
- 1/4 cup molasses
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk flour, baking soda, salt, and ground ginger in a bowl.
- Cream butter and brown sugar until fluffy. Beat in egg and molasses.
- Mix in fresh and crystallized ginger.
- Gradually add dry ingredients to wet ingredients.
- Scoop dough into 1-inch balls. Roll in sugar if desired.
- Bake for 10-12 minutes until edges are firm.
- Cool on wire racks before serving.
Notes
- Store in airtight container for up to 1 week.
- Dough can be frozen for later use.
- Adjust ginger amounts for milder or stronger flavor.
