Description

A delicious vegan twist on the classic Caesar salad, wrapped in a soft tortilla for an easy and healthy meal.


Ingredients

Scale
  • 1 large tortilla (whole wheat or gluten-free)
  • 2 cups chopped romaine lettuce
  • 1/4 cup vegan Caesar dressing
  • 1/4 cup vegan parmesan cheese
  • 1/2 cup chickpeas (cooked and drained)
  • 1/4 cup cherry tomatoes (halved)
  • 1/4 cup croutons (optional)
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Lay the tortilla flat on a clean surface.
  2. Spread the vegan Caesar dressing evenly over the tortilla.
  3. Layer the chopped romaine lettuce, chickpeas, cherry tomatoes, and croutons on top.
  4. Sprinkle with vegan parmesan cheese and drizzle with lemon juice.
  5. Season with salt and pepper to taste.
  6. Fold the sides of the tortilla inward and roll tightly to form a wrap.
  7. Cut in half and serve immediately.
