Ingredients

- 1 large tortilla (whole wheat or gluten-free)
- 2 cups chopped romaine lettuce
- 1/4 cup vegan Caesar dressing
- 1/4 cup vegan parmesan cheese
- 1/2 cup chickpeas (cooked and drained)
- 1/4 cup cherry tomatoes (halved)
- 1/4 cup croutons (optional)
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Lay the tortilla flat on a clean surface.
- Spread the vegan Caesar dressing evenly over the tortilla.
- Layer the chopped romaine lettuce, chickpeas, cherry tomatoes, and croutons on top.
- Sprinkle with vegan parmesan cheese and drizzle with lemon juice.
- Season with salt and pepper to taste.
- Fold the sides of the tortilla inward and roll tightly to form a wrap.
- Cut in half and serve immediately.

- Use a homemade or store-bought vegan Caesar dressing.
- For extra protein, add grilled tofu or tempeh.
