Description

Delicious vegan lentil meatballs shaped like mummies, perfect for Halloween or any spooky occasion.


Ingredients

Scale
  • 1 cup cooked lentils
  • 1/2 cup breadcrumbs
  • 1 tbsp flaxseed meal mixed with 3 tbsp water
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1 sheet vegan puff pastry, cut into thin strips

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mash the cooked lentils slightly.
  3. Add breadcrumbs, flaxseed mixture, onion, garlic, paprika, salt, and pepper. Mix well.
  4. Shape the mixture into small meatball shapes.
  5. Heat olive oil in a pan and lightly brown the meatballs on all sides.
  6. Wrap each meatball with thin strips of puff pastry to resemble mummy bandages.
  7. Bake for 15-20 minutes until the pastry is golden and crispy.
  8. Use small dots of mustard or ketchup for eyes.

Notes

  • Serve with marinara sauce for dipping.
  • You can use store-bought puff pastry or make your own.
  • For gluten-free, use gluten-free breadcrumbs and pastry.
