- 1 3/4 cups all-purpose flour
- 1 cup sugar
- 1/2 cup brown sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1/4 tsp ginger
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 1/4 cup water
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a large bowl, mix flour, sugars, baking soda, salt, and spices.
- In another bowl, whisk pumpkin puree, oil, water, and vanilla.
- Combine wet and dry ingredients. Stir until just mixed.
- Pour batter into the prepared pan. Bake for 60-65 minutes.
- Let cool in pan for 10 minutes. Transfer to a wire rack.
Notes
- Use canned or homemade pumpkin puree.
- Do not overmix the batter.
- Store in an airtight container for up to 3 days.
