Instructions
- Season the venison loin with salt and pepper.
- Heat olive oil in a pan over medium-high heat.
- Sear the venison loin for 3-4 minutes per side until browned.
- Remove the venison and let it rest.
- In the same pan, sauté shallot until soft.
- Add crushed juniper berries and red wine, simmer until reduced by half.
- Pour in beef stock and cook until slightly thickened.
- Stir in butter to finish the sauce.
- Slice the venison and serve with the sauce.
