Description

A refreshing summer salad combining watermelon, cucumber, and feta cheese for a light and flavorful dish.


Ingredients

Scale
  • 4 cups cubed watermelon
  • 1 large cucumber, diced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lime juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a large bowl, combine watermelon and cucumber.
  2. Sprinkle feta cheese and mint leaves over the mixture.
  3. Drizzle with olive oil and lime juice.
  4. Season with salt and black pepper.
  5. Toss gently to combine.
  6. Serve immediately or chill for 30 minutes before serving.
