Creamy whipped feta paired with roasted beets for a vibrant and flavorful appetizer.


Ingredients

Scale
  • 8 oz feta cheese
  • 1/4 cup Greek yogurt
  • 2 medium beets, roasted and diced
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1 clove garlic, minced
  • 1/4 tsp black pepper
  • 1 tbsp fresh dill, chopped

Instructions

  1. Preheat oven to 400°F. Wrap beets in foil and roast for 45 minutes until tender.
  2. Let beets cool, then peel and dice them.
  3. In a food processor, blend feta, Greek yogurt, olive oil, lemon juice, and garlic until smooth.
  4. Transfer whipped feta to a serving bowl.
  5. Top with roasted beets and sprinkle with black pepper and dill.
  6. Serve with crackers or toasted bread.
