- 2 medium beets, roasted and diced

Instructions
- Preheat oven to 400°F. Wrap beets in foil and roast for 45 minutes until tender.
- Let beets cool, then peel and dice them.
- In a food processor, blend feta, Greek yogurt, olive oil, lemon juice, and garlic until smooth.
- Transfer whipped feta to a serving bowl.
- Top with roasted beets and sprinkle with black pepper and dill.
- Serve with crackers or toasted bread.
