Description

A simple and flavorful recipe for whole roasted chicken seasoned with garlic and herbs.


Ingredients

Scale
  • 1 whole chicken (about 45 pounds)
  • 4 tablespoons olive oil
  • 6 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 lemon (halved)
  • 1 onion (quartered)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
  4. Rub the mixture evenly over the chicken, including under the skin.
  5. Place the lemon halves and onion quarters inside the chicken cavity.
  6. Place the chicken on a roasting pan breast-side up.
  7. Roast in the oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Let the chicken rest for 10 minutes before carving.
