  • 2 cups wild mushrooms, chopped

  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried thyme

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add onions, garlic, and mushrooms. Cook until softened, about 5-7 minutes.
  3. Remove from heat and stir in breadcrumbs, parsley, salt, pepper, and thyme. Let the mixture cool slightly.
  4. Butterfly the turkey breast by slicing it horizontally, leaving one side intact. Open it like a book.
  5. Spread the mushroom mixture evenly over the turkey breast. Roll it up tightly and secure with kitchen twine.
  6. Place the stuffed turkey breast on a baking sheet or roasting pan. Roast for 45-60 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Remove from the oven, let it rest for 10 minutes, then slice and serve.
