Ingredients

- 2 cups chopped rhubarb
- 1 cup granulated sugar
- 1/4 cup water
- 1 tbsp lemon juice
- 1 1/2 cups all-purpose flour
- 1/2 cup butter, softened
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C).
- Mix rhubarb, granulated sugar, water, and lemon juice in a saucepan. Cook over medium heat until thickened.
- Combine flour, butter, and powdered sugar in a bowl. Press half into a greased baking dish.
- Spread rhubarb mixture over the crust. Crumble remaining dough on top.
- Bake for 30 minutes or until golden brown. Cool before cutting.

- Use fresh rhubarb for best results.
