- 2 cups shredded zucchini (about 1 medium zucchini)
- 3 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese
- 2 tbsp chopped fresh herbs (such as parsley, thyme, or chives)
- 1 bottle (12 oz) beer, at room temperature
- 1/4 cup melted butter
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×5-inch loaf pan.
- In a large bowl, mix flour, baking powder, salt, and black pepper.
- Stir in shredded zucchini, cheddar cheese, and fresh herbs.
- Pour in the beer and melted butter. Mix until just combined.
- Transfer batter to the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Use a light or medium beer for best flavor.
- Drain excess liquid from shredded zucchini if needed.
- Fresh herbs add more flavor, but you can use 1 tsp dried herbs if preferred.
