Healthy zucchini oatmeal muffins perfect for breakfast or a snack.
Ingredients

- 1 cup grated zucchini
- 1 cup rolled oats
- 1 cup whole wheat flour
- 1/2 cup honey
- 1/2 cup milk
- 1 egg
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C).
- Mix zucchini, oats, flour, honey, milk, egg, baking powder, cinnamon, vanilla, and salt in a bowl.
- Pour batter into muffin tin lined with paper cups.
- Bake for 20-25 minutes until golden brown.
- Let cool before serving.
Notes
- Squeeze excess water from zucchini before grating.
- Store muffins in an airtight container for up to 3 days.
