Description

Healthy zucchini oatmeal muffins perfect for breakfast or a snack.


Ingredients

Scale
  • 1 cup grated zucchini
  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup honey
  • 1/2 cup milk
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix zucchini, oats, flour, honey, milk, egg, baking powder, cinnamon, vanilla, and salt in a bowl.
  3. Pour batter into muffin tin lined with paper cups.
  4. Bake for 20-25 minutes until golden brown.
  5. Let cool before serving.

Notes

  • Squeeze excess water from zucchini before grating.
  • Store muffins in an airtight container for up to 3 days.
