- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Extra sugar for rolling
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk flour, baking soda, and salt. Set aside.
- In a large bowl, beat butter and sugar until light and fluffy.
- Add egg, lemon zest, lemon juice, and vanilla. Beat until combined.
- Gradually add dry ingredients, mixing until just combined.
- Chill dough for 30 minutes for easier handling.
- Shape dough into 1-inch balls. Roll each ball in extra sugar.
- Place 2 inches apart on baking sheets. Flatten slightly with a glass.
- Bake 10-12 minutes until edges are lightly golden. Cool on pan 5 minutes, then transfer to wire rack.
Notes
- For extra lemon flavor, add 1/2 teaspoon lemon extract.
- Store cookies in an airtight container at room temperature for up to 1 week.
- Dough can be frozen for up to 3 months.
