Description
Juicy portobello mushrooms topped with fresh mozzarella, tomatoes, and basil. Air fried until bubbly. A quick and healthy main dish.

- 4 large portobello mushrooms, stems removed
- 1 cup cherry tomatoes, sliced
- 8 oz fresh mozzarella, sliced
- 1/4 cup fresh basil leaves
- 2 tbsp balsamic glaze
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 375°F.
- Clean mushrooms with a damp paper towel. Remove stems.
- Brush both sides of mushrooms with olive oil. Season with salt and pepper.
- Place mushrooms in the air fryer basket, gill side up.
- Top each mushroom with mozzarella slices and tomato slices.
- Air fry for 8 minutes.
- Check if cheese is melted and mushrooms are tender. Cook 2-4 more minutes if needed.
- Remove from air fryer. Top with fresh basil and drizzle balsamic glaze.
Notes
- Use small mozzarella balls if you prefer.
- Balsamic vinegar can be reduced on the stove for a glaze.
- Serve immediately.
