Description

Juicy portobello mushrooms topped with fresh mozzarella, tomatoes, and basil. Air fried until bubbly. A quick and healthy main dish.


Ingredients

Scale
  • 4 large portobello mushrooms, stems removed
  • 1 cup cherry tomatoes, sliced
  • 8 oz fresh mozzarella, sliced
  • 1/4 cup fresh basil leaves
  • 2 tbsp balsamic glaze
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 375°F.
  2. Clean mushrooms with a damp paper towel. Remove stems.
  3. Brush both sides of mushrooms with olive oil. Season with salt and pepper.
  4. Place mushrooms in the air fryer basket, gill side up.
  5. Top each mushroom with mozzarella slices and tomato slices.
  6. Air fry for 8 minutes.
  7. Check if cheese is melted and mushrooms are tender. Cook 2-4 more minutes if needed.
  8. Remove from air fryer. Top with fresh basil and drizzle balsamic glaze.

Notes

  • Use small mozzarella balls if you prefer.
  • Balsamic vinegar can be reduced on the stove for a glaze.
  • Serve immediately.
