- 1 1/2 cups almond flour
- 1/2 cup pumpkin puree
- 1/4 cup maple syrup
- 2 large eggs
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper.
- In a large bowl, whisk together almond flour, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix pumpkin puree, maple syrup, eggs, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Stir until just combined.
- Transfer the batter to the prepared loaf pan. Smooth the top.
- Bake for 40 to 45 minutes. A toothpick inserted in the center should come out clean.
- Let the bread cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- You can add 1/2 cup of chopped walnuts or pecans for extra crunch.
