Ingredients

- 2 pounds potatoes, peeled and cubed
- 1/2 cup diced salami
- 1/2 cup diced provolone cheese
- 1/4 cup sliced black olives
- 1/4 cup diced roasted red peppers
- 1/4 cup chopped pepperoncini
- 1/3 cup mayonnaise
- 2 tablespoons red wine vinegar
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Boil potatoes in salted water until tender, about 15 minutes. Drain and cool.
- In a large bowl, combine salami, cheese, olives, red peppers, and pepperoncini.
- Add cooled potatoes to the bowl.
- In a small bowl, whisk together mayonnaise, vinegar, olive oil, oregano, salt, and pepper.
- Pour dressing over potato mixture and toss gently to coat.
- Refrigerate for at least 1 hour before serving.
Notes
- Chill the salad for best flavor.
- You can substitute ham for salami.
- Add fresh parsley for color.
