Description

A potato salad with Italian antipasto ingredients like salami, olives, and cheese.


Ingredients

  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup diced salami
  • 1/2 cup diced provolone cheese
  • 1/4 cup sliced black olives
  • 1/4 cup diced roasted red peppers
  • 1/4 cup chopped pepperoncini
  • 1/3 cup mayonnaise
  • 2 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Boil potatoes in salted water until tender, about 15 minutes. Drain and cool.
  2. In a large bowl, combine salami, cheese, olives, red peppers, and pepperoncini.
  3. Add cooled potatoes to the bowl.
  4. In a small bowl, whisk together mayonnaise, vinegar, olive oil, oregano, salt, and pepper.
  5. Pour dressing over potato mixture and toss gently to coat.
  6. Refrigerate for at least 1 hour before serving.
